Amazing Avocado

Avocado. You either love it or you hate it. There seems to be no in between. Me? I love it! My favorite way to start my day is with a cup of coffee and some avocado toast.

I’m going to share some of the amazing health benefits of avocado, along with a super tasty and easy way to make avocado toast (with cheese). 
The health benefits of avocado are plenty. Here are a few:

💚 They contain 20 different vitamins and minerals.

💚They don’t contain any cholesterol or sodium.

💚They have more potassium than bananas!

💚They have tons of fiber.

💚They contain tons of antioxidants.

💚They’ve been shown to lower cholesterol, prevent certain types of cancer and can help with arthritis.

🍞On to the yummy! The way I prepare my avocado toast (almost every morning), comes inspired by YouTuber and Instagrammer, Thataylaa.

🍞Toast (I like whole grain or oatmeal bread)

🍞One ripe avocado.

🍞Laughing Cow spreadable cheese (Swiss).

🍞I toast the bread, then spread the cheese and avocado onto the toast. Super easy, nothing fancy, hella delicious (and healthy)! And voilà! A yummy and nutritious meal or snack!

Healthy Pumpkin Pie Smoothie


Ya, its springtime. So what? There’s never a wrong time to enjoy pumpkin pie. Especially pumpkin pie smothered in cool whip. Mmmmmm.

I made this smoothie sort of on accident. I ran out of my go to smoothie makin’ berries so I utilized what I had. And omg it’s delicious!

Now, I use the term “healthy” kind of loosely. If you’re looking for something crazy strict healthy, this ain’t it.

But if you’re looking for a bit of a healthier alternative to actual pumpkin pie smothered in cool whip that’s sort of healthy, then this is the place for you!
*I didn’t really measure anything out, so the measurements listed below are estimates. Use these ingredients to your liking and feel free to tweak.

Ingredients

  • Handful of ice
  • Unsweetened vanilla almond milk
  • Big spoonful of pumpkin butter
  • A bit of pure cane liquid sugar
  • Dash of vanilla extract
  • Dash of cinnamon
  • One big spoonful of frozen coconut
  • One scoop of Essential 10 Ancient Grains Superfood

Blend in blender or Ninja. Literally tastes exactly like a piece of pumpkin pie and whipped cream. Sooooooo good! Enjoy!
